The picture is a little blurry but you get the idea. I'm on a roll with "traditions" right now and this one is purely Southern. I used my new cookbook, Bon Appetit Fast Easy Fresh, although I altered the sweet potato part a little. I also baked that layer a little first before pouring on the pecan layer. It tastes a little like pumpkin pie and the pecans add a nice dimension to it. The thing that strikes me is that this pie tastes HEALTHY. Something you can feel good about eating. Think about all the vitamins in it.Today was rainy, one of those dreary kinds of days. I didn't want to be just sitting around watching TV so I made up a batch of Multigran Pancake Mix from the King Arthur Whole Grain Baking cookbook. It's kind of like a healthy bisquick, all you do is measure out a cup, then add an egg and buttermilk.
